I have probably mentioned it before but baking and cooking are not really my forte...

However! I can actually make apple and blackberry crumble. It's a super yummy recipe that has been in our family for years and it's actually pretty easy. I've made it quite a few times and each time I've tweeked it and I think I've now got it just right!

You should be very honoured that I'm sharing the secret with you guys ;)

What you'll need for around 8 portions:
4 cooking apples (or 3 large ones), peeled and sliced
A couple of handfuls of blackberries (enough for one layer)
2 cups of plain flour
2 cups of brown sugar
1/3 of a cup of butter

What to do:
1. Peel and slice the cooking apples and place them in a saucepan with a heavy sprinkling of brown sugar and a splash of water. Heat gently until the apples begin to soften (but don't let them get mushy). It's best to slice the apples NOT cube like I did because you don't want them to end up like apple sauce.



2. Place the flour, brown sugar and butter into a mixing bowl. The key here is to not use too much butter. The less you use the more crumbly the mixture is where as if you use too much it starts to get more cakey. 




3. Using your finger tips rub the butter into the flour and sugar until you get a bread crumb like consistency. Basically make sure you don't have any lumps of butter!




4. Find an oven proof dish (I hate the word dish, is there something else you would call it, hah?) and cover the bottom with a thin layer of the crumble mixture. My pottery bowl (that just doesn't sound quite right) is 24 cm in circumference and 6 cm deep. This extra layer of crumble is the second secret key to a great crumble ;)



5. Place a layer of the cooked apple into the bowl so it covers the first layer of crumble and then add a layer of the blackberries. I used blackberries picked from the garden which were frozen for later use.



6. Now cover the filling evenly with the rest of the crumble mixture.


7. The final secret key is to generously sprinkle brown sugar over the top of the crumble just before it goes into the oven. This gives it that extra little crunch!


8. Preheat the oven to gas mark 4, 400 Fahrenheit or 200 degrees Celsius and bake for around 25 minutes or until golden brown all over. keep and eye on it though so it doesn't burn!
