Epic Mixed Spring Salad


Yesterday marked the first day of Spring, yey!

So, what better time to enjoy a salad for lunch and I thought I would share this yummy recipe (you can hardly call a salad a recipe!) with you guys. It is dead easy as all it involves is a bit of chopping and mixing.

What you will need for one large salad or two small ones:
Mixed leaves
1/4 of an Apple
1 stick of celery
1/4 of a cucumber
1/2 a red pepper
1/2 a yellow pepper
2 handfuls of cherry tomatoes
Wensleydale and Cranberry cheese
Brie Cheese
1 handful of mixed seeds and nuts
1 handful of dried cranberries

What to do:
1. Tear the leaves roughly and place them in a bowl.
2. Chop the apple, celery, cucumber, pepper and tomatoes into small cubes and add them to the bowl.
3. Crumble the cheeses over the top.
4. Throw the nuts, seeds and cranberries into the bowl,
5. Top with dressing, I like hazelnut oil and pomegranate vinegar.
6. I like to place a lid on the bowl and shake it to mix everything together.

And that is it!
